Instead of doing "inline" checks for which CoreAudio API to use, put some compat stuff at the top once, and for all. This makes the code easier to follow, and may help if new code code targeting AVAudioEngine instead of AUGraph on newer systems is added at some point (e.g. if the feature needs to be ported to iOS). Tested on OSX 10.5, while using both the 10.4 and 10.5 SDK, and also targeting both 10.4 and 10.5. (Building from 10.6 while targeting 10.5 was not tested, though, but no release build does this.) Also unify `COREAUDIO_*` define names, and include some noErr/nullptr cleanups.
