Summary:
We have had problems with `.gitattributes`, `.bat` and `.pbxproj` (Xcode) files for a while. The two main concerns were:
- Xcode project files not diffing correctly.
- Windows files having messed up line endings.
This PR fixes both issues, hopefully forever.
After seeing the diffs from v0.63 -> v0.64 and the changes in https://github.com/facebook/react-native/pull/29792, I, again, felt that this is going to cause problems, so I looked into both issues.
I started with `git check-attr -a Artsy.xcodeproj/project.pbxproj` after removing the `.gitattributes` file that contained `*.pbxproj -text` and there are no "guessed" attributes that would break things, and diffing and checking in worked well with the current git version. I agree this is not needed, so I left it out.
I looked into what it was doing before, and it was telling git (for the xcode project file) to "unset text", which means (according to https://git-scm.com/docs/gitattributes#_text) that it should not try to do any line ending changes when checking in that file. At some point git must have done this, and that's why it was needed, but no more, so it's safe and good to get rid of this, as it helps with nothing anymore.
Now for the bat files. We don't need any extra instructions for `gradle` and `*.sh` files as they are guessed correctly, so these are also safe to keep removed (https://github.com/facebook/react-native/pull/29792/files#diff-618cd5b83d62060ba3d027e314a21ceaf75d36067ff820db126642944145393eL5).
But we do need the `*.bat` instruction. I noticed that when working on macOS there were two problems that made things funky.
- One, is that the editor (usually vscode but not the important) would convert line endings to lf when editing a bat file.
- Two, is that git thought the files are lf line endings.
To fix the first one, I added a rule in `.editorconfig` (that's whats important, when any editor just supports editorconfig, but all my editors do). I can't believe how we missed that for sooooo long {emoji:1f605}!
To fix the second, I added the `.gitattributes` instruction **and** `renormalize`d the files (https://git-scm.com/docs/git-add#Documentation/git-add.txt---renormalize and https://docs.github.com/en/github/using-git/configuring-git-to-handle-line-endings#refreshing-a-repository-after-changing-line-endings). I think the problem all along was that even though the files had crlf, git still thought they were using lf.
After the editorconfig change and the renormalization, everything behaves correctly and as expected. Changing bat files on macOS and Windows is fine now, producing only the smallest change needed, no random line ending diffs. Also here is a screenshot of one of the files actually crlf. It's these tiny things at the end of each line {emoji:1f453}.

I have tested this on macOS and Windows, doing changes in both bat and xcode files, and verified that diffing and checking in files works well.

Summary:
During some rc releases we have seen the file `gradlew.bat` get diffs from release to release, and sometimes the diff is nothing, except some script messing with the line endings of that file.
According to [this](https://help.github.com/en/github/using-git/configuring-git-to-handle-line-endings#example) and my own experiments using `unix2dos` and `dos2unix` to swap the line endings of that file, this change fixes this problem.
We specify all the `.bat` files should have the Windows line endings.

To assist with the test, you can use `brew install unix2dos`.
- Init a new project or use an existing one.
- Make sure in your `.gitattributes` of the project and of the user (home dir or `.config/git/attributes` don't have anything about `.bat` files, or `* text=auto`.
- Run `unix2dos ./android/gradlew.bat`.
- Check git status.
- Run `dos2unix ./android/gradlew.bat`.
- Check git status.
- You will notice that the changes when swapping around are the whole file changed.
- Using the changes in this PR, and doing the above, the git status will be no changes, as it should be. The line changes stay Windows-style.

Summary:
Adding `xcscheme` files for iOS template back in. They were removed in https://github.com/facebook/react-native/issues/26471 after https://github.com/facebook/react-native/issues/25451. We have reverted the change on `.gitignore`, as this directory is supposed to be in git, but we didn't revert the removed files. Now they are back as well.
You can also see here that the two files are still missing, they got removed on rc.0 and are still missing on rc.3.

Files that are inside `xcshareddata` are meant to be "shared", and that means committed to git. These files are for example `ios/RnDiffApp.xcodeproj/xcshareddata/xcschemes/RnDiffApp.xcscheme`, and if ignored that means they are removed from the repo or are missing when cloning. These should be present. They are the shared schemes so Xcode knows what and how to build, on everyone's machine.
I noticed it being there in a new project on 0.62.0-rc.0.

Summary:
On `textContentType` `newPassword` on ios, there is another property called `passwordRules` on ios 12 that can give hints to the os to generate a password with specific requirements like [here](https://developer.apple.com/password-rules/).
This is useful for apps that have a "register" screen with `emailAddress`/`username` and a `newPassword` fields, to let ios make a password that will satisfy the requirements and not one that might be not accepted after the user presses "register".

I have used RN for a long time, and for all this time, crash reporting has been less great than native development crash reporting. At some point, companies like sentry, bugsnag and a bunch of others started supporting sourcemaps for js crashes in RN, which helped a lot.
But native crashes were (and still are) much harder to diagnose.
..Until now :D
I have make a repo of a sample RN app, included this PR in it, and some code and screenshots to help.

I was trying to get good crash reports from native crashes in iOS for a looong time. I spoke with people in sentry, in bugsnag and more, and I could not get this solved. There was no clear way to get the **native** crashed to display correctly.
I made two repos here, one for [sentry](https://github.com/pvinis/SentryBadStack) and one for [bugsnag](https://github.com/pvinis/BugsnagBadStack), demonstrating the correct js handling and the bad native handling.
After all this, and talks with their support, twitter etc, I investigated further, on **why** this was happening. I thought there must be some reason that native crashes look bad in all the tools, and in the same way. Maybe it's not their fault, or up to them to fix it, or maybe they didn't have the experience to fix it.
In a test project I created, I checked what's up with the `RCTFatalException`, and I found out that the React Native code is catching the `NSException`s that come from any native modules of a RN app and converting it into an string and sending it to `RCTFatal` that created an `NSError` out of that string. Then it checks if the app has set a fatal error handler and if not, goes ahead and throws that `NSError`.
The problem here is that `NSException` has a bunch more info that the resulting `NSError` is missing or is altering. Turning the callstack into a string renders crash reporting tools useless as they are missing the original place the exception was thrown, symbols, return addresses etc. In both repos above it can be seen that both tools were thinking that the error happened somewhere in the `RCTFatal` function, and it did, since we create it there, losing all the previous useful info of the original exception. That leaves us with just a very long name including a callstack, but very hard to actually map this to the code and dsym.
I added a fatal exception handler, that mirrors the fatal error handler, as the error handler is used around React Native internal code.
Then I stopped making a string out of the original `NSException` and calling `RCTFatal`, and I simply throw the exception. This way no info is lost!
Finally, I added some code examples of native and js crashes and added a part in the `RNTester` app, so people can see how a js and a native error look like while debugging, as well as try to compile the app in release mode and see how the crash report would look like if they connect it to bugsnag or sentry or their tool of choice.
I have attached some images at the bottom of this PR, and you can find some in the 3 repos I linked above.
[iOS] [Fixed] - Changed the way iOS native module exceptions get handled. Instead of making them into an `NSError` and lose the context and callstack, we keep them as `NSException`s and propagate them.
[General] [Added] - Example code for native crashes in iOS and Android, with buttons on RNTester, so developers can see how these look when debugging, as well as the crash reports in release mode.
